This original miso is made using healthy, naturally cultivated rice and soybeans grown at Wacca Farm, Cotan’s partner farm.

The brown rice koji miso is brewed by Meito Miso, a miso maker located in Setouchi City, Okayama Prefecture—the same area as Wacca Farm.

Since its founding in 1954, Meito Miso has been producing fermented foods such as miso, amazake, and koji without using any food additives, carefully preserving the natural flavors of the ingredients. It is a trusted miso brewery with over half a century of history. Today, the third generation of the family runs the business together as brothers.

コタンのグループ農場「ワッカファーム」で育った健やかな自然栽培のお米と大豆を使って仕込んだオリジナル味噌。

玄米麹のお味噌はワッカファームと同じ岡山県瀬戸内市にある味噌屋「名刀味噌」さんで仕込んでいただきました。

名刀味噌さんは、1954年の創業以来、半世紀にわたり食品添加物を使わず、原料本来の味を大切にした味噌、甘酒、麹などの発酵食品ををつくり続けている信頼のお味噌屋さんです。現在は三代目がご兄弟で営まれています。
