Using traditional sun-drying methods, the natural umami of the daikon is deeply concentrated.
It is then slowly fermented and aged for over 180 days using rice bran (nuka) and salt.
Enjoy the rich, deep flavor developed through aging, along with the pleasant tanginess from lactic acid fermentation.
It pairs perfectly with brown rice.
