Compared to regular soba, Izumo Soba has a darker color. This is due to the "Hikigurumi" or “Ippon-biki" milling method, in which the buckwheat kernels—called “Kuro Soba” with the hulls still attached—are ground and used as is. The whole kernels are kneaded into the dough, giving the soba a more pleasant texture, firmer bite, and a more robust flavor.
This soba is made with 100% buckwheat flour and contains no binding agents. The philosophy behind their additive-free soba production is "Delicious to eat, good for the body."
