Before the start of summer kelp fishing (pole fishing), young kelp harvested around June is called "Sao-mae Kombu" (pre-pole kelp).
This soft root portion of the kelp, known as "Moto Kombu," which has a smooth, gelatinous texture, making it perfect for dishes like kombu rolls or oden. It rehydrates faster than regular kelps and is less likely to fall apart when cooked, making it very easy to use.
