The brewing was entrusted to Sasano Zosu, a vinegar brewery in Okayama that has supported Cotan since its founding.

2024 marks the very first batch of this special vinegar! The fermentation went exceptionally well—even surprising the seasoned brewers at Sasano—and the result is a vinegar with a brilliant clarity and rich, fragrant aroma.

Most commercially available vinegars today are made using a method called "quick fermentation," where air is mechanically pumped in to rapidly accelerate the process. While efficient, this often results in a sharp acidity and a lack of depth in flavor.
In contrast, this brown rice vinegar is brewed using the traditional "static fermentation" method, which allows the vinegar to develop slowly and naturally over time. This results in a mellow, well-rounded flavor with a gentle acidity and complex umami.

It is also bottled raw, without heat treatment, preserving its fresh and vibrant character.

With just a touch of soy sauce and sugar, this umami-rich vinegar makes perfect sunomono (vinegared dishes). We hope you enjoy its depth and delicate balance.

コタンのグループ農場「ワッカファーム」で育った健やかな自然栽培のお米で作ったオリジナル玄米酢。

醸造は、コタンが創業時からお世話になっている岡山の「笹埜造酢」さんに仕込んでいただきました。

2024年が記念すべき初仕込み！今回は熟練の笹埜さんも驚くほど発酵がうまくいき、輝くような透明感と芳醇な香りが素晴らしいお酢に仕上がりました！

一般的に流通している多くのお酢は「速醸」と呼ばれる、機械で空気を送り込み強制的に発酵を早めるやり方で、極めて短時間で製造されています。そのため味に奥行きがなくツンとした酸味が強くなりがちですが、この玄米酢は「静置発酵」という昔ながらの方法でゆっくりと時間をかけて醸造されているので、豊かな風味とやさしい酸味がとてもまろやかです。

また、火入れをせずに生のまま瓶詰めされているので、フレッシュな爽やかさも特徴です。

お醤油と少しのお砂糖だけで酢の物の味が決まる旨味たっぷりの玄米酢、ぜひお楽しみください。
